When it comes to my weaknesses, I have to admit that there are few things I find more irresistible than chips and queso. Whether it’s a festive party setting or a quiet weeknight, savory, creamy queso is always delicious! Today, I’ve teamed up with Velveeta and Ro*Tel to share my family’s favorite queso recipe, which features plenty of fresh veggies and can be whipped up in a matter of minutes. I love to serve this at gatherings with friends, but is also pairs great with weeknight tacos, nachos, and quesadillas. Read on to see how this recipe comes together!
When you taste this delicious queso dip, you’ll likely never believe it contains just 4 main ingredients and some yummy herbs and spices. At the heart of this recipe is a zesty combination of Ro*Tel and Velveeta, which gives this dip a creamy, ooey and gooey texture that will make it a hit at any gathering or dinner table. To amp up the freshness and texture, I love to add some delicious veggies to my queso. Sweet peppers, green onion and cilantro are our family’s favorite additions, but you can add anything under the sun: black beans, shredded carrots, other fresh herbs–you name it!
To prepare the dip, cut 16 ounces of Velveeta into cubes, and place in a microwave-safe bowl. Pour a 10-ounce can of Ro*Tel over the cheese. (My personal favorite variety is the Mexican blend with lime juice and cilantro, but you can use any variety that pleases your palate.)
Microwave on HIGH for 90 seconds, and then give everything a good stir. Continue microwaving in 90-second intervals, stirring after each interval, until the dip is smooth and creamy. Now, give 3 green onions, 3 small sweet red peppers (or one medium red bell pepper) and 1/4 cup of fresh cilantro a good chop, and add the veggies to the cheese mixture, along with 1/2 teaspoon cumin and 1/4 teaspoon garlic powder. For parties and gatherings, I like to garnish my dip with a bit of the reserved chopped veggies and serve it with our family’s favorite veggie and seed tortillas chips, which come in a variety of festive, pretty colors and make for a really pretty presentation.
Easy Veggie Queso
Ingredients
- 16 ounces Velveeta cubed
- 1 10-ounce can Ro*Tel (any variety)
- 3 green onions finely chopped
- 3 small sweet red peppers OR 1 medium red bell pepper finely chopped
- 1 handful fresh cilantro chopped (about 1/4 cup)
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
Instructions
- Place the Velveeta and Ro*Tel in a microwave-safe bowl. Microwave on HIGH for 90 seconds, and then give everything a good stir. Add the green onions, peppers, cilantro, cumin and garlic powder, and stir until well incorporated.
