With every holiday, I love to make yummy, fun treats to enjoy with my kids, and Easter is such a fun time to grab our aprons and bowls and spend some time together in the kitchen. Without a doubt, one of my absolute favorite things to make for any holiday are Rice Krispies® treats. This year, my kids and I came up with a fun idea to create carrot Rice Krispies® treats–just in time for a visit from the Easter bunny! Read on for all of the details, plus a printable version of the recipe.

To Make a Batch of Carrot Rice Krispies® Treats, You Will Need…
Ingredients:
- 6 cups Rice Krispies® cereal
- 3 tablespoons butter
- 4 cups miniature marshmallows
- Vanilla bark candy coating
- Orange gel food coloring (or a combination of red and yellow)
- Orange sugar sprinkles
- Green vine candies
Tools:
- Egg-shaped cookie cutter
- 10×15″ jelly roll pan
- Kitchen shears

In a very large bowl, measure out the Rice Krispies® cereal. Set aside. Spray the jelly roll pan with non-stick spray.
Combine the butter and marshmallows in a large microwave-safe bowl. Microwave on high for 1 minute, and then stir. Continue to microwave in 30-second intervals, stirring after each interval, until the marshmallows and butter are completely melted and fully incorporated.
Immediately pour the marshmallow mixture over the Rice Krispies®, stirring well. (For some good messy fun, you can also spray your hands with non-stick spray and mix by hand. My kids love that step!) Dump the mixture onto the greased pan, using a spatula or your hands to spread the mixture evenly in the pan. Place the pan into the refrigerator for 15 minutes to allow the treats to set.
While the treats chill, place 8 ounces of the vanilla candy coating into a medium microwave-safe bowl. Melt the candy coating according to the product package instructions. Stir in the food coloring, mixing well to incorporate.
When the treats have chilled, use the cookie cutter to cut into shapes.
Trim each of the green vine candies into three equal sections using the kitchen shears. Place the point of the shears into the center hold of each section, and then carefully trim into 4 equal sections to form the leaves for the carrot, making sure to leave about 1/2″ uncut at the bottom of the piece.
Tuck the uncut end of one of the leaf sections into the top of one of the treats, pinching the Rice Krispies® treat mixture around it to seal, and adding a bit of extra mixture as needed to fully conceal the end of the stem, as shown.
Use your hands to pinch the bottom portion of the treat into a carrot shape.
Carefully spoon a small amount of the candy coating onto the center of the carrot, using a small knife or spatula to smooth. While the coating is still wet, sprinkle some of the sugar sprinkles on top.
Repeat this process to make as many carrots as you like (we were able to make about 15 treats from one batch, but results may vary).
In no time at all, you will have created and entire patch of tasty (and totally adorable!) Rice Krispies® treats carrots to enjoy just in time for Easter!
These would be so fun to serve at a party or special gathering, but I love that they are easy enough to whip up as an after-school treat.
