I was in college, and I thought it was one of the best things I had ever eaten! Something about these flavors blend perfectly together, and especially when paired with lots of tangy cheese and sour cream. What's not to love, right? When I started looking for the perfect spinach artichoke dip recipe to make at home, I always found myself adding spicy ingredients to give the dip an unexpected kick. This dip is amped up with spicy tomatoes and green chiles and a small amount of hot sauce to really give it a wow factor.
Quality dairy ingredients are the heart and soul of this recipe. Delicious cream cheese, tangy sour cream (full fat is best), and shredded sharp cheddar cheese give the dip a rich, creamy foundation that is irresistibly good. Growing up, I have such fond memories of visiting my grandpa's dairy farm, and I love that using wholesome dairy products like these helps support dairy farm families today. Start by beating a block of softened cream cheese at medium speed, until creamy. Beat in the sour cream until fully incorporated. Add in the shredded cheddar cheese... ...and mix well to combine. Drain and roughly chop the quartered artichokes, and add them to the bowl. Squeeze all of the moisture you can out of a package of chopped spinach. I have found the best way to do this is to place the spinach in a clean tea towel, and twist to wring out the excess moisture. This is a super important step so the texture of the finished dip isn't too runny! When the spinach is prepped, add it to the bowl along with the other ingredients. Add a can of diced tomatoes with green chiles, a bit of salt and some garlic powder. If you're feeling particularly festive, you can add a bit of hot sauce, too! Mix well until all of the ingredients are thoroughly combined, and then spread the dip into a greased baking dish. Bake until warm and bubbly, and then sprinkle a bit more shredded cheddar on top. Bake a few minutes more until the cheese is ooey, gooey, and ready for digging right in! I love to serve this spinach artichoke dip with tortilla chips, but is is equally delicious served with crackers. It is also fun to serve it in a bread bowl for a fancy touch. All of the flavors here blend so perfectly together. This dip is great for game day, holiday entertaining, or any time at all when you're looking for a delicious appetizer to make and share. Hot and Cheesy Spinach Artichoke Dip Recipe
Hot & Cheesy Spinach Artichoke Dip
Ingredients
- 8 ounces cream cheese softened
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese divided
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1 teaspoon hot sauce optional
- 1 14.5-ounce can quartered artichokes, chopped
- 1 10-ounce can chopped tomatoes and green chiles
- 1 10-ounce package frozen chopped spinach, thawed and squeezed dry
Instructions
- Preheat oven to 350.
- Beat the cream cheese at medium speed until creamy. Beat in the sour cream. Stir in 2/3 cup on the shredded cheddar, reserving the remaining 1/3 cup for sprinkling on the dip before baking.
- Blend in the salt, garlic powder, and hot sauce (if using). Stir in the artichokes, chopped tomatoes and green chiles, and spinach, and stir well to combine.
- Pour the mixture into a greased 2.5-quart baking dish. Bake for 25 minutes. Sprinkle on reserved cheddar cheese, and bake an additional 5 minutes, until cheese is melted and bubbly. Serve immediately.
