Growing up, I can remember receiving Mexican wedding cookies as a delicious gift for Christmas each year from some of our good friends. It was always something I looked forward to each and every year! Something about the shortbread and pecan flavors combined and then coated with a generous amount of powdered sugar makes these some of the very best cookies you’ll find. The texture of these Mexican wedding cookies is light, airy and absolutely irresistible, and as an added bonus, they look as beautiful as they taste, making them perfect for gift-giving or entertaining! Although some Mexican wedding cookies call for granulated sugar, this recipe uses powdered sugar, instead, which means the cookies turn out wonderfully light and airy. They almost melt in your mouth when you take a bite!
The white powered sugar coating makes these cookies so pretty. They are perfect for serving at wedding or baby showers, and they are terrific for packing up to give as gifts.

Ingredients
- 1 cup butter softened
- 1 cup powdered sugar plus 1/2 cup for rolling the cookies
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup ground pecans
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350 degrees and line two baking sheets with parchment paper.
- Cream the butter with an electric mixer until fluffy. Gradually add the powdered sugar, mixing until fully incorporated. Stir in the flour, 1/2 cup at a time, until incorporated. Stir in the salt, pecans, and vanilla, mixing well.
- Shape the dough into 1 1/2 inch balls, and place on the parchment-lined baking sheets. Bake for 10-12 minutes, or until set. While the cookies are warm, roll each in powdered sugar, and place on a wire rack to cool completely.
One of the things I love most about these Mexican wedding cookies is how incredibly easy they are to make! In just about 20 minutes from start to finish, you can have a warm batch ready to enjoy with a tall glass of milk. Yum!
