It’s always nice to come across a baking project that turns out absolutely adorable but that takes just minutes to make. These cute rainbow cupcakes are made with a simple cake mix and ready-made frosting, and they are a darling cupcake for birthday parties and special occasions, or just to enjoy any day of the week. They are a fun little idea for St. Patrick’s Day, too, when you include some sweet gold and shamrock sprinkles for an extra lucky touch!

Rainbow Cupcake Ingredients & Supplies
- Cupcake Liners
- Blue Cake Mix
- Tub of White Frosting
- Piping Bags
- Large Circle Piping Tip and Coupler
- Airheads Extremes Rainbow Berry Candy
- Kitchen Shears
- Miniature Marshmallows
- Wilton Shamrock Coin Mix Sprinkles
Bake the cupcakes in the liners according to the instructions on the cake mix box. Allow the cupcakes to cool completely on a baking rack.
Use the piping bag and tip to pipe the white frosting in a spiral around the top of each cupcake.
Use kitchen shears to cut a 2″ length of one of the Airheads candy strips.
Curve the candy strip into a bow, and press it gently into the frosting to secure it in place.
Add marshmallow “clouds” along either end of the rainbow…
…and then finish with some lucky gold coin and shamrock sprinkles if you like.

I love that these are super simple to make, which makes them the perfect little project to do with children of all ages. Food crafts like this one are some of my very favorite projects to make with my kids!
Depending upon the season, you can opt to leave out the shamrock and gold accents, although I think the pot of the gold at the end of the rainbow is a perfect theme no matter the time of year. Using the Airheads candy is such a great way to make rainbow cupcakes like these in so quickly and easily!
Rainbow Cupcakes
Ingredients
- Blue Cake Mix
- Tub of White Frosting
- Airheads Extremes Rainbow Berry Candy
- Miniature Marshmallows
- Wilton Shamrock Coin Mix Sprinkles
Instructions
- Bake the cake mix into cupcakes according the box instructions. Allow the cupcakes to cool completely on a wire rack.
- Place the white frosting into a piping bag outfitted with a large circle piping tip and coupler. Pipe the frosting in a swirl on top of each cupcake.
- Use kitchen shearsto trim the Airheads candy into 2" sections. Bend the sections into a bow shape and place onto the top of each cupcake, securing the ends down into the frosting. Press miniature marshmallows into the frosting along either end of the rainbow candy piece. Finish with the coin and shamrock sprinkles along one end of the rainbow, if desired.

I made these several years ago for St. Patrick’s day. I used rolos with clear piping gel and tiny gold sequins as the ‘coins’. Turned out really cute!
