Ingredients
- 12oz can evaporated milk (chilled)
- 1 cup sugar
- 3oz lemon Jello
- 1/4 cup fresh lime juice
- 3 dozen vanilla wafers (divided)
- 2 tablespoons butter (melted)

To prepare the crust, crush 20 vanilla wafers. Combine wafer crumbs and butter, and press mixture into bottom of a 9-inch pie plate. Arrange remaining wafers around edges. Set crust aside to prepare the filling. | |

Beat evaporated milk at high speed with an electric mixer until foamy; gradually add sugar, beating well. Add Jello; beat until blended. Stir in lime juice. Spoon filling into prepared crust. Freeze 8 hours or until firm. |

This looks delicious, Amy! I make a summertime pie with lemonade concentrate, Cool Whip, and sweetened condensed milk. We love it, but it’s fairly heavy. This sounds light as a feather and very refreshing!
